Detailed character creation wouldnt make sense for fable. You always change your appearance throughout the game and your character evolves through the morphing system. Theres no need for any customisation more than that. What they should have is just the option for gender and ethnicity.

Seems like there's not much for your character to be smiling about is the point. This is literally the average Fable character, it is perfect. I just hope you can choose whether to play with a male or female character. I don't know why we wouldn't be able to. I'm just gonna assume we can until I hear otherwise.
