Is the Eva's soul just of the human donor or is it a fusion of the donor and the Eva's natural angel soul? I am wondering this because the way Evas fight when berserk is very animalistic and some like unit 01 will even try eating the angel it is attacking, which I feel like a human might not be so thrilled about eating.

Unit 01 only seem to go Berserk when the pilot is in imminent danger, which seems to be a product of the mother's desire to protect their child.
